Keeping Desserts Independent this Independence Day
Due to the current circumstances, some usual July 4th dessert favorites may be ruled out for 2020. There’s too many contamination concerns to set up an ice cream sundae bar, or just to set a pie or two out for guests to help themselves. Here are a few ideas for 4th of July single serving desserts that are simple, safe and fun:
Red, White, and Booze Ice Pops
Ingredients for 6 Ice Pops:
¾ Cup Sugar
½ Cup Water
1 1/3 cups quartered fresh strawberries
1 ½ tablespoons vodka
4 ounces of softened cream cheese
1 tablespoon vodka
1 1/3 cups fresh blueberries
1 ½ tablespoons vodka
1.) Whisk sugar and water together in a saucepan over medium heat until sugar is dissolved and the syrup is clear (2-3 minutes). Cool syrup to room temperature.
2.) Blend strawberries, 1 ½ tablespoons of syrup, and 1 ½ tablespoons vodka together in a blender or processor until smooth. Pour the strawberry mixture into the bottom of 6 ice pop molds, then freeze until firm (at least 1 hour).
3.) Whisk cream cheese and 1 ½ tablespoons syrup together in a bowl until smooth; whisk in 1 tablespoon of vodka. Pour cheese mixture into ice pop molds on top of firm strawberry layer; freeze until cream cheese later is firm (at least 1 hour)
4.) Blend blueberries, 1 ½ tablespoons syrup, and 1 ½ tablespoons vodka together in a blender or food processor until smooth. Pour blueberry mixture on top of firm cheesecake layer; freeze until solid.
Go the extra step and serve these pops in champagne flutes so that melting in the summer sun does not cause a mess!
Make sure the rest of that vodka does not go to waste. Grab some shot glasses and celebrate America’s big day!
Ingredients for 1 parfait:
¾ cup vanilla yogurt
1 teaspoon grated orange zest
2 large fresh strawberries, sliced
¼ cup maple nut granola
½ cup fresh blueberries
1.) Mix yogurt and orange zest together in a bowl.
2.) Layer some of the strawberries, yogurt mixture in a parfait glass. Repeat the layers until you are out of ingredients.
